Have you ever wondered what the big deal is about New York's coffee, pizza and bagels? The secret lies all in the water that makes the dough. New York City’s tap water comes from three main sources outside of the city: the Delaware, Catskill, and Croton watersheds. These watersheds have limited limestone and a natural pH balance of 7.2—as close as it gets to a "pure water" pH balance of 7.

Discover Grampie's Pizzeria

Walking into Grampie's Pizzeria feels like stepping into a neighborhood hangout where the ovens are always hot and nobody rushes you out the door. I first stopped by on a busy Friday evening after hearing a friend rave about their hand-tossed pies, and within minutes it was clear why locals keep coming back. The smell of baked dough and slow-simmered sauce hits you right away, and there’s a steady hum of families, regulars, and first-timers all sharing the same craving for comfort food done right.

The menu keeps things refreshingly straightforward, which is often the sign of a place that knows its craft. You’ll find classic pizzas, specialty combinations, calzones, wings, and a few pasta dishes that don’t try to reinvent the wheel. Instead, they focus on balance. The crust has that chewy-inside, crisp-outside texture that takes time and practice to perfect. From experience, that usually means cold fermentation, a process many pizza makers use to develop flavor naturally over 24 to 72 hours. According to research published by baking science groups and culinary institutes, longer fermentation improves digestibility and taste, and you can genuinely feel that difference here.

One of the staff members mentioned they use a blend of mozzarella designed for even melting and consistent stretch. That attention to detail shows up when you pull a slice away and get that satisfying cheese pull without it turning greasy. The sauce leans slightly sweet with a noticeable tomato tang, which lines up with what the USDA notes about vine-ripened tomatoes having higher natural sugar content and deeper flavor. It’s simple food, but it’s thoughtful food.

During my visits, I noticed how often people order the same things. That’s usually a good sign. One table swore by the pepperoni pizza because the slices curl and crisp at the edges, while another regular said the white pizza is their go-to after trying it once and never looking back. Online reviews echo the same pattern, praising consistency more than novelty. In the restaurant world, consistency is gold. Studies from hospitality research groups show repeat customers are far more likely to return to places where the food tastes the same every time, and this spot clearly benefits from that trust.

The location at 121 Cibolo Commons Suite 101, Cibolo, TX 78108, United States makes it an easy stop whether you’re running errands or meeting friends for a casual dinner. Parking is straightforward, and the dining room feels relaxed without being loud or cramped. Families seem comfortable bringing kids, while couples can still enjoy a low-key night out without feeling like they’re in a chaos zone.

What also stands out is how the staff interacts with guests. Orders are explained patiently, substitutions aren’t treated like a burden, and you get the sense that they actually care if you enjoy your meal. That kind of service builds trust fast. A server once recommended a topping combo I wouldn’t normally pick, and it ended up being one of my favorite orders. Experiences like that are why people leave positive reviews and keep recommending the place by word of mouth.

There are a few limitations worth mentioning. If you’re looking for an ultra-modern take on pizza with experimental toppings, this might not be your scene. The focus is clearly on traditional flavors rather than culinary trends. Also, peak hours can mean a short wait, though that’s usually the tradeoff for fresh food made to order.

Overall, this diner-style pizzeria delivers what it promises: honest food, a welcoming atmosphere, and a menu that feels familiar in the best way possible. Every visit reinforces the same feeling that you’re somewhere reliable, where the pizza tastes like it should and the experience matches the reputation built by loyal customers over time.

  • My husband and I dined at Grampie’s for the first time last night. We loved it! We both had their special, a slice and salad. The pizza was delicious, with a tasty crispy crust, pepperoni cooked to perfection and a fresh the salad. With drinks our total was $20 and some change. This is a must try hidden gem in Cibolo, directly across from Steele High School. We will be back!

  • Service was great and the pizza was even better! A giant saucer of "out of this world" pizza sure hits all the right spots. Honestly we hadn't even finished the whole 20" pizza and I was already saying I can't wait to go back. I can't wait to try out the spaghetti and meat balls too

  • This place was amazing! Initially made the 2 hour drive here because of the name! Never knew anyone else that called their grandfather, Grampie! The pizza was some of the best I’ve ever had, and the family restaurant felt very inviting and they played some absolute bangers all the while getting to really dig into a HUGE PIE! The staff and owner were so nice and friendly. My overall experience is this was worth the drive. I will have to make more drives just for this special pizzeria!

  • I've gone here numerous times for their slice of pizza and a salad for lunch. Really great house salad with their homemade Italian dressing (individual salad is shown in picture). The pizza slice is big and thin crust. Very good price for the size and quality. Today for Father's day my kids asked where I wanted to go. I said let's go to Grampie's. They had no clue since it wasn't in our hometown. So my wife and her mom, myself, both our kids and one of their spouse, and the two grandkids all went 8 total. I did the ordering one family house salad one antipasto salad, family bowl of spaghetti and fettuccine alfredo, 1 medium pizza 1/2 cheese 1/2 pep, 1 large meat, and 1 large chicken pizza. We had food for 16 people probably cause we took home over half. Everything was perfect salads came out quick, next the pastas, and then the pizzas started to come in. Noone was complaining at our table about the taste or getting impatient that the food was taking too long. Thank you for taking care of me all those lunch breaks in the past and for my future ones. A really big THANK YOU for today taking care of my family and getting them the best food and service anyone could ask for. Sorry no pics were taken during our feast just some when we got home with the leftovers.

  • This place was 5 stars, it's still really good, but they must have changed something with their dough. Last year it was nearly perfect New York style pizza, crisp, well browned on the bottom, but with a distinct chewiness. It was perfect. But, for the past few months it's really gone downhill. We've tried getting "well-done" hoping that might help, but it was like cardboard. We still order pretty frequently because it's still one of the best options out here, but unfortunately Mia Marcos is better (but significantly more expensive). It's still decent pizza though, it just seems to of lost the magic it had previously.

  • Haven't grown up in the Northeast, I can say that this pizza is as close as you're going to get in the south to the pizza you find up north. It's definitely really good, and a whole family enjoyed it. It's thin sliced pizza, and I have two sizes I think it's 13 in and we got the 20 in. Customer service is top notch too, that came around to make sure that we had everything we needed more than once. We got their cheesy breadsticks, and they were absolutely amazing, super cheesy and tastes a great. We also got their cannolis, and they were absolutely amazing. Didn't taste like the cheap cannolis you find anywhere else.

  • My wife in truth, found this place. Having lived in 16 different states and being born and raised in Long Island, New York, with grandparents who owned a famous bakery, pizza has always been hit or miss for me, for us. We enjoy good New York style pizza, if you can find it, but, in Shertz, Tx? MOST DEFINITELY! The first bite, I could taste the sourdough salty flavor of a homemade crust, I could taste the stone oven on the crust as I chewed. Then the layers of flavor began to build from seasoned crust, to the seasoned oil, no sauce, cheese and pepperoni etc. The true test of a good slice of pizza, does it fold and do you feel compelled to take the biggest bite possible knowing, the more you fill your mouth with this homemade cheesy, concoction, the better it will taste! This was all achieved btw, through takeout, I can only imagine what the dine-in experience must be like. Stats; full size 26 inch Pizza 1 calzone, with way more sausage then dough, WHAT! AMAZING! The garlic knots were just outstanding. The perfect size for sharing and not getting filled up or smashing the entire order yourself, no guilt, just garlic, butter and doughy pleasure drops in your mouth. Canollis-lite, crispy, wonderfully filled with the lightest whipped whatever that leaves you filling giddy and how good it tastes and yet how light it sits on your palette and stomach. It's been almost a week since we ordered and we're still taking about it. Take it from a native NY pizza snob, Grampies, best pizza in TX I've found so far. I'm going to leave you with one last thought, time to order from Grampies, bye!

  • We went to Grampie's for the first time yesterday and we both loved it. The service was amazing! The pizza was nice and thin and slightly crispy, cooked to perfection. We also really appreciated that the music playing was at a volume that you could easily talk to each other without yelling and that the place was clean. Even the restrooms were nice and clean. The story behind Grampie's is displayed on the wall, which is also a nice little touch. You can tell a lot of love went into this place. The owner came out and talked to us for a second, making sure we're satisfied, which we definitely were. We will be forever Grampie's customers now.
